One of my all time favorite Fall recipes is Pumpkin Pie Cake. I actually got the recipe from one of the teachers I used to teach with in Florida (one day I will tell the story of how I was once a teacher…in Florida…)! Anyways, my sister mentioned this weekend after baby yoga (which was adorable) that she hasn’t had it in a while, so I think I may be making it soon. It is SUPER easy and everyone always loves it. I love an easy recipe. So here it is:
You will need:
-1 box of yellow cake mix (I prefer Duncan Hines) and the ingredients it calls for (oil, water, egg)
-1 can of pumpkin (There is usually a brand at my store called Libby’s–just get the regular can not the double size)
-1 box of Jell-o instant vanilla pudding
-Pumpkin Pie Spice (in the spice section–also really yummy on sweet potatoes)
-Cream Cheese frosting
Mix cake mix with ingredients it calls for, mix in pumpkin and jell-o pudding packet, then put a pretty generous amount of pumpkin pie spice. I usually taste the batter to make sure it has enough of the pumpkin pie spice–I am terrible at writing and following a recipe, so I am not even going to try to guess the measurement.
Once everything is all mixed together and you have a good consistency, pour the batter into whatever cake pan you plan to use and then bake it according to the baking directions that are on the Yellow Cake Mix. I usually use a toothpick in the middle of the cake to insure it is done. My mom also taught me that you can push on the cake in the middle and if it is done, the indentation should bounce back.
After the cake is out of the oven and cooled you can decorate it with frosting and chopped nuts or sprinkle some pumpkin pie spice on top of the frosting to make it look pretty.
You should try this and bring it to your family/friend Thanksgiving!! Yum..now I want some Pumpkin Pie Cake…
