Best way to cook salmon!

One of my favorite shows on TV and of all time is the Pioneer Woman.  I love trying her recipes because they always turn out delicious, and none of her recipes are super hard to make.  I also just like her because she seems like such a wholesome person and I just enjoy watching her cook!

Before I met Dan, I was convinced that I did not like salmon.  I thought it tasted weird, so I always just passed on trying it.  Dan encouraged me to try it again once we started dating, first as sushi.  I loved it!!!  Then he cooked it for me one night with some help from his mom, who I like to call Granny Janie (this is what we say that THOR- our dog calls her-haha).  He baked it in the oven with some lemon and dill and I thought it was so YUMMY!

So, thanks to Dan, I realized I do in fact like salmon, so I was on a mission to find an easy, but delicious recipe.  That was when I found this one from the Pioneer Woman: http://thepioneerwoman.com/cooking/pams-day-of-deliciousness/

It is seriously a piece of cake…all that you do is put the salmon on a baking sheet, season it however you would like, and then pop it in the COLD oven.  Then once it is in you crank the heat to 400 degrees and then bake it for 25 minutes.  It comes out absolutely perfect, every single time.  I am pretty sure it is fool proof!

The thing that I love most about this recipe is that it is perfect for people like Dan and I that both work full time, but enjoy a home cooked meal because you don’t have to preheat the oven, so we can pop it right in the oven as soon as we get home!  Not to mention there are many health benefits to eating salmon (see here: http://articles.mercola.com/sites/articles/archive/2013/04/15/wild-alaskan-salmon.aspx).

The other part that I love about this recipe is that you can get creative with your seasoning.  I have tried:

  • olive oil, salt and pepper (for a simple approach)
  • olive oil, salt, pepper, and a little dill
  • olive oil, salt, pepper, dill and lemon once it comes out of the oven
  • grainy mustard with a little dill
  • mustard mixed with brown sugar and smear it on top
  • teriyaki sauce/glaze

If you like salmon, you should definitely try this method of cooking it!  I told my boss about it and she said she makes it at least once a month!  So, there you have it…dinner for tonight!!
