As I shared yesterday, I tried out a new Short Rib recipe on Sunday and I have to say it was pretty delicious and easy–what could be better? I, initially, was planning to try a recipe that my college roomie, Michelle, shared with me, but I already had the ingredients for this one—but I will be sure to try Michelle’s suggestion next time!
I bought the short ribs from Costco, which is my favorite place to buy meat. It always tastes better than normal food store meat and the prices are much better, not to mention they have so many organic options, which I enjoy. I am very fortunate because we don’t have a membership yet, but my parents and our neighbors do, so they take me with them or pick things up for me when they go. I found this recipe online (http://www.food.com/recipe/slow-cooker-beef-short-ribs-32147). I pretty much just followed the steps and actually measured majority of the ingredients (I typically do not measure anything…) I didn’t have enough time to cook it on low so I used the high setting for about 4 hours until I got home and saw it was cooking pretty good so I switched it to the low setting for about 3 more hours.
- 1⁄3cup flour
- 1 teaspoon salt
- 1⁄4teaspoon pepper
- 2 1⁄2lbs boneless beef short ribs
- 1⁄4cup butter
- 1 cup chopped onion
- 1 cup beef broth
- 3⁄4cup red wine vinegar
- 3⁄4cup brown sugar
- 1⁄4cup chili sauce
- 2 tablespoons catsup
- 2 tablespoons Worcestershire sauce
- 2 tablespoons minced garlic
- 1 teaspoon chili powder
- Put flour, salt and pepper in a bag (I used a Pyrex with a lid which I found to be really easy).
- Add ribs and shake to coat.
- Brown ribs in butter in a lg skillet.
- Put in slow cooker.
- In same skillet, combine remaining ingredients.
- Bring to a boil, stirring.
- Pour over ribs.
- Cover and cook on low for 9 hours.
I served this over rice, as the picture shows. I also roasted some carrots and made a salad to go with it! It was awesome, I highly recommend trying it!
