One of my favorite courses of a meal is appetizers. I like the idea of a bunch of different options where you can have a few tastes of each. Last week, my friend, Jen and I went out to dinner at Barbounia (http://barbounia.com) and ordered a whole bunch of appetizers to share and it was perfectly delicious!
Today, I am sharing one of my favorite appetizers that is super fast and easy to make and it is usually a big hit! I personally love broccoli, my favorite pizza is Broccoli with Ricotta and fresh garlic. So, when I saw this recipe on Pinterest, I knew I had to try it. This recipe comes from http://www.staceysnacksonline.com/2011/01/broccoli-bites-for-kids.html, and is just so yummy.
Here it is:
16 oz. package of frozen chopped broccoli, thawed and drained of liquid (I used fresh steamed broccoli)
1 1/2 cup of grated cheddar cheese
3 eggs
salt & pepper
1 cup of seasoned Italian breadcrumbs
Mix all the ingredients together in a large bowl.
With your hands, form small patties and lay on a parchment lined baking sheet.
Bake at 375F for 25 minutes, turning the patties after the first 15 minutes.
Let cool and enjoy!
