Today, I am going to take the opportunity to express how thankful I am for my friends. I feel so lucky to have such wonderful friends in my life. They make me laugh often and enjoy life a lot more than I would without them. My friends have helped me through some of the most difficult times, and celebrated the happy times with me, as well. One of my favorite things about working in the city is getting to meet my friends for lunch or happy hour on Friday. It is always the perfect release from a crazy day/week.
One of my friend’s Rachel shared a recipe with me a while back, as she was making it for her sister Megan’s Mock Thanksgiving, and it has become one of my ultimate favorites. It is so incredibly good, and not too difficult to make. Rachel’s mom is actually the one who sent me over this recipe, and gave me the OK to share it. I had to check first that it wasn’t a secret family recipe. They call this recipe Corn Casserole and it is one of the best things I have ever tasted. If you are looking for something fun and easy to make and bring to your family Thanksgiving, this is your recipe!
-1 stick of melted butter
-1 box of Jiffy corn muffin mix
-1 beaten egg
-1 eight ounce sour cream
-1 can of whole corn
-1 can of creamed corn
Mix it all ingredients together and spray the baking pan. Then pour the mixture into the baking pan.
Bake at 350 until it looks set and cooked through, about 30 – 45 min. The edges usually brown a bit.
