Sooooo….this isn’t really a recipe, but I am still counting it as one. When we were on our honeymoon in Belize, I loved talking to all the locals about the food and how they prepared it. Probably because it was always soooo yummy. One thing that a few people told me when we were there was how they make rice and beans. I love rice and beans, but the rice and beans in Belize was so much better than I have ever had here in the US.
There was a guy named Larry that worked at our resort and was always so fun to hang out with. He was so accommodating and always had something interesting to tell us. The one day he started telling us how he loved to cook, and one of his specialties was rice and beans. I made him tell me all about how he makes it in hopes that I could recreate it once we returned. The one thing that he said that I always do now is that he cooks the rice in coconut milk instead of water. Since rice is usually cooked in a 2-1 ratio of water to rice, I usually use 1 1/2 cups of coconut milk, 1/2 cup of water and then 1 cup of rice. I love the way it tastes. I sometimes use all coconut milk, depending on the consistency of the milk. The rice comes out creamier and has such yummy coconut flavor. Larry told me that he always uses refried beans in his rice and beans and usually mixes the beans in about half way through cooking the rice. I haven’t tried to make the rice and beans yet, but I make the coconut rice all the time.
You should definitely try it, if you like coconut, of course!
