Simple Side Dish…Chickpea Salad!

So this recipe is super easy and I actually learned it when going to Trader Joe’s to shop, as it was one of the items they were sampling.  It was so yummy, I now make it all the time.  I don’t have the exact measurements, but you can kind of wing it to taste.  Here is what you need:

  • Frozen, Shelled Edamame
  • Package of Cherry Tomatoes, halved
  • Can of Chickpeas, rinsed in strainer
  • Diced Red Onion
  • Apple Cider Vinegar
  • Olive Oil
  • Salt & Pepper

First you need to boil water and cook the edamame.  You can get the shelled ones at Trader Joe’s if you have on near you.  They usually only take about five minutes.  Drain them and run them under cold water.  Once the edamame has cooled, put in a bowl and add in chickpeas, cherry tomatoes, and red onion.  Toss ingredients with apple cider vinegar and olive oil, along with some salt and pepper to taste.

I usually make it ahead of time and throw it in the fridge for a little before serving it.  It tastes better cold and with a little time for all the flavors to mix together.
